Banana and Chocolate Chip Pancakes

Ingredients:

  • 2 bananas, sliced
  • 4 eggs, beaten
  • 4 tbsp. chocolate chips
  • Spray cooking oil
  • Chocolate or honey to serve.

Method:

  1. Place the bananas and eggs into a stand mixer
  2. Blitz until smooth
  3. Add the chocolate chips, then reduce the speed and pulse a couple of times to mix in the chocolate chips
  4. Heat a frying pan (medium heat)
  5. Spray the surface of the pan with cooking oil
  6. Cook the pancakes for a couple of minutes each side, or until they turn golden in colour.

 

Serve with a drizzle of honey or chocolate sauce.
