Banana and Chocolate Chip Pancakes
Ingredients:
- 2 bananas, sliced
- 4 eggs, beaten
- 4 tbsp. chocolate chips
- Spray cooking oil
- Chocolate or honey to serve.
Method:
- Place the bananas and eggs into a stand mixer
- Blitz until smooth
- Add the chocolate chips, then reduce the speed and pulse a couple of times to mix in the chocolate chips
- Heat a frying pan (medium heat)
- Spray the surface of the pan with cooking oil
- Cook the pancakes for a couple of minutes each side, or until they turn golden in colour.
Serve with a drizzle of honey or chocolate sauce.
